I don’t usually enjoy seeing Monday mornings, but I am extra thankful today. Between Cinco de Mayo and spending time with family, I had an indulgent weekend!
This morning, I need a healthy, filling breakfast to say adios to the weekend and get my week off to a good start. I started my day with a bowl of oatmeal. Oats are a good source of fiber, with no cholesterol or sodium. You can use quick cooking oats if you prefer, but I don’t recommend pre-packaged flavored oats. Oatmeal is so simple to make that you don’t need those extra additives or sugar.
